Today's Google Doodle celebrates the beloved breakfast dish, chilaquiles.

 Today's Google Doodle is a treat for food enthusiasts, celebrating one of my all-time favorite breakfast dishes, the delightful chilaquiles. Ironically, I made this dish for myself twice this week. The Doodle was created by Oakland-based guest artist Chava Oropesa, according to Google.

Chilaquiles are a simple yet versatile dish. At its most basic, you need fried tortilla strips or chips, enchilada sauce, cheese, and a fried egg or two. Just cover the chips with enchilada sauce and cheese, heat it up, top with eggs, and enjoy. It's quick, easy, and delicious!


The style of chilaquiles varies by region in Mexico. You can customize your chilaquiles with avocado, guacamole, salsa, cotija cheese, melted queso, jalapeños, or any other toppings you prefer, including slow-cooked pork or chicken. For a creative twist, you could even make a green chile gravy and create a hybrid of biscuits and gravy chilaquiles, possibly using corn muffins instead.
